Having just returned from a very memorable trip to Venice I was reminded (on perhaps a few too many occasions) of the deliciousness of the perfect Bellini cocktail. Perhaps it was just the romance of the city together with the sunshine but I felt I had forgotten about this underrated drink and would love to see it come back into fashion.
Being back home though it was the Just Peachy Popband which has inspired me to ditch the Pimms this summer and make my own 'taste of Italy' aperitif. To enjoy this simple yet yummy cocktail you will need 2 ounces of chilled peach juice (use white peaches to make your own) and 4 ounces of Prosecco - combine the two in a Champagne flute or a small tumbler for a more authentic Harry's Bar feel.
